  • 20 oz. Spinach, frozen, pkg
  • 2 cups Sour cream
  • 1/4 tsp. Nutmeg, fresh ground
  • 2 cups Cornbread, packaged stuffing mix
  • 1/5 lb. Peer smoked ham, thin slices
  • 1/2 cup Parmesan, grated
  • 2 cups Cheese sauce
Cheese Sauce:
  • 2 tbs. Butter
  • 2 tbs. Flour
  • 1/4 tsp. Cayenne pepper
  • 1 1/2 cups Milk
  • 1 cup Sharp cheddar, grated
  • 1 tbs. Sherry
prearation
  1. Drain spinach.  Combine spinach, sour cream and nutmeg.  Add cornbread stuffing mix.

  2. Place about 1/3 c spinach mixture on a slice of ham and roll ham around mixture.  Set into hotel pan evenly.

  3. Evenly pour cheese sauce over ham rolls, then tip with parmesan cheese.

  4. Bake for 25 minutes at 350 degrees F. covered.  Uncover and bake until brown (about 10 minutes).

Cheese Sauce
  1. Prepare a roux with butter and flour.  Add Cayenne pepper.

  2. Add milk and heat until thickened.

  3. Stir in cheese, do not boil.  Finish with sherry.
