- 1 ea. Peer prime rack of pork
- 1 cup Marjoram oil
- Fresh ground black pepper - to taste

48 hours in advance make herbed oil. pick leaves from fresh marjoram, chop and add to olive oil - 1 tbs. per cup. Set aside to macetate.
Four hours before service, cut pork rack into single or double chops. Add pepper to chops and then coat with oil.
Over hot char-broiler quickly mark the chops (remember this product is fully cooked).
Garnish with a sprig of fresh marjoram. Chops can be served with sautéed spinach, wild rice or flavored mashed potatoes.

Almost any fresh herb, such as basil or thyme, can be substituted for marjoram. Cutlets can be substituted when chops are too large for presentation
