Baking/Roasting Conventional Oven: Whole Ham
|
Preheat conventional oven to 325 degrees F. Place ham in roasting pan either dry or with small amount of liquid in bottom of pan. Use water, stock, wine, fruit juice, or other. Cover and bake. Ham is fully cooked, do not overheat. Heat to more than 140 degrees F. internal temperature.

Glazing: Whole Ham
|
Ham can be enjoyed with or without a glaze. To glaze the ham, top with your desired glaze for the last 10 to 15 minutes of cooking time. Many flavors may be used for a glaze - brown sugar, mustards, honey, preserves, dried fruits, etc. Glaze can also be reserved separately and served on sliced ham as a sauce.

Griddling: Slices
|
Preheat griddle to 350 degrees F. Portion approximately for application. Brown slightly on each side. 3- to 4-oz. breakfast portion or side dish takes 45 sec. to 2 min. 6- to 8-oz. ham steak is ready in 2 to 3 min.

Saute, Pan-fry: Slices
|
Preheat pan, add frying medium such as oil, butter, spray oil, or infused oil, Brown slightly on each side 1 to 2 min.; time varies with equipment. 3- to 4-oz. breakfast portion or side dish cooks in 45 sec. to 2 min. 6- to 8-oz. ham steak in 2 to 3 min.

Water Saute: Slices
|
Fat reducer: same sequence as saute but with small amount of water. Saute for I to 2 minutes. The ham will not brown.

Baking/Roasting: Slices
|
Preheat conventional oven to 325 degrees F. Shingle or overlap in hotel pan. Moisten with scant amount of water or coat with oil for shine and moisture retention. Cover and cook for approximately 30 minutes for 2-lb. batch. Note: For convection oven, reduce cooking time by 15 to 20 percent.

Microwaving: Slices

Sandwiches, thin-sliced or shaved.
